Chicken Schnitzel and Cabbage Salad
Serves Eight (8)
Cabbage salad ingredients
½ cabbage shredded 2 onions shredded 1 bunch mint chopped ¼ cup canola or olive oil ¼ cup vinegar salt and pepper
Method
Place cabbage, onions and mint leaves in a bowl, add oil and vinegar. Season with salt and pepper and mix through. Note: you can add sliced red capsicum or carrots to salad if you like.
Schnitzel ingredients
8 boned chicken thighs 2 cups plain flour 5 cups dry breadcrumbs 3 eggs mixed together 2 cups milk fresh or powdered milk and water 1½ cups canola or olive oil salt and pepper
Method
Wash chicken and pat dry with paper towel. Coat chicken in flour, then eggs and crumbs, then set aside. Heat oil in pan. Place chicken in oil and cook until golden brown, turning over a few times. Place on paper towel to absorb oil and set aside. Then serve on a plate with cabbage salad.
