Kangaroo Stroganoffsantateresa

Serves Eight (8)



2 kg kangaroo meat cut into strips (rump, topside or fillet)
2 sweet potatoes peeled and cut into wedges
1 x 500gm packet frozen broad beans
2 onions shredded
2 cups sliced mushrooms
salt & pepper
½ cup canola or olive oil
2 packets Maggi stroganoff mix



Heat oil in electric frypan, add onions and brown.
Add kangaroo strips and seal quickly.
Add sweet potatoes and enough water to just cover the meat.
Simmer until potatoes are soft.
Add mushrooms and broad beans and cook until tender.
Thicken with Maggi stroganoff mix. Stir through.
Season with salt & pepper.
Serve on its own or with rice.
NOTE: wild bush yams can be used instead of sweet potatoes.
