Roast Kangaroo in Bacon
Serves Six (6)
Ingredients
6 kangaroo rumps 12 slices bacon ½ cup canola or olive oil salt & pepper
Vegetables for roasting
6 potatoes cut in half 6 carrots cut lengthways 6 onions cut in half 12 pieces of pumpkin
Method
First roast all the vegetables in the electric frypan and set aside. Wrap kangaroo with bacon like a parcel, lightly season with salt and pepper. Heat oil in electric frypan and place rumps in, sealing both sides and cook until medium rare (meat should look red inside) and let it rest for 5 minutes. This keeps the juices in. Return vegetables to the pan and warm through. Slice up the meat with the bacon and serve with the roasted vegetables. NOTE: bush turkey is also great to use in this dish
