Pumpkin Dampertiwiislands

Serves Six - Eight (6 - 8)



4 cups plain flour
60 gm or 3 tablespoons of baking powder
1 teaspoon salt
1 tablespoon margarine
1 litre milk (powdered milk and water can be used)
1 cup mashed cooked pumpkin



Place flour, baking powder and salt in a large bowl and mix.
Add margarine and rub into flour until you have a crumble consistency.
Add mashed pumpkin and pour in the milk a cup at a time and hand mix into a dough.
Knead until soft but firm, and mould into shape.
Leave to rest for 10 minutes.
After resting, brush over with milk and cook in oven at 200 deg for
10 minutes.
Then turn oven down to 180 deg and cook until golden brown
and ready.

NOTE: bacon or cheese can be used instead of pumpkin. You can also cook straight onto coals, camp oven or electric frypan.
