Fried Riceangurugu

Serves Eight (8)

 

Ingredients

6 cups pre-cooked rice
1 cup chopped bacon
2 cups small diced onions
1 teaspoon diced garlic
2 cups small diced carrots
2 cups frozen peas
1 x 400gm can corn kernels
8 fried eggs (set aside)
½ cup canola or olive oil
salt & pepper
salt reduced soy sauce

 

Method

Heat oil in electric frypan. Add onion and garlic, lightly brown.
Add bacon and carrot and cook for five minutes on high heat.
Next add peas and corn and cook until peas are hot.
Mix in rice and heat through.
Finally add soy sauce.
Serve with a fried egg on top.
Add some prawns if you like.
NOTE: This is a good recipe for using left-over chicken or seafood. You can also use wallaby meat.
