Sweet and Sour Fish

Serves six


6 pieces white flesh fish fillets, whole or cutlets (great for catfish or stingray)
1 cup plain flour
½ cup canola oil
salt & pepper


Sweet and Sour Sauce (Bush Style) Ingredients

½ cup vinegar
1/3 cup sugar
juice 1 lemon or lime
250ml (1 cup) tomato juice
250ml (1cup) pineapple juice
¼ cup tomato sauce or ketchup
½ cup diced onion
½ cup diced capsicum red or green
460gm can diced pineapple
½ cup cauliflower pieces
½ cup sliced carrots
salt & pepper
2 tablespoons cornflour
½ cup water



Season fish with salt and pepper and lightly coat in flour. Heat oil in electric frypan and gently fry fish until lightly brown. Remove from pan and drain on to kitchen paper and set aside


Sweet Sour Sauce

Place tomato juice, pineapple juice and sugar in electric frypan and bring to boil.

Add onions, capsicum, cauliflower and carrots and simmer on low heat until cooked but still crunchy.

Add vinegar, lemon or lime juice, tomato sauce and pineapple pieces, thicken cornflour with water and add to pan and stir through gently until mixed through.

Place the fish back into electric frypan and reheat for one minute and serve with rice.
