Chilli Con Carne

Serves eight

 

Ingredients

1 kilo beef mince
2 large onions peeled and diced
3 cloves garlic crushed and chopped
1-2 red chillies diced finely (or 1-2 teaspoons chilli powder)
1 large red capsicum finely diced
1 large green capsicum finely diced
3 tablespooons red paprika powder
3 tablespoons tomato paste
2 x 460gm can tomatoes whole or diced
2 x 460gm red kidney beans drained
1 x 460gm can chick peas drained
3 teaspoons Cumin powder
1 Maggi beef stock cube
3 tablespoon olive oil or canola oil
2 cups water
salt & pepper

Method

In electric frypan heat oil and cook onions and garlic on medium heat until clear.

Add meat and cook until brown.

Add paprika powder, cumin powder, chilli and tomato paste and stir through.

Next add capsicum pieces, canned tomatoes and juice, crush beef stock cube and add to frypan with water and stir through - simmer for approx 25 minutes.

To finish add drained kidney beans and chic peas, season with salt and pepper to taste, cook for further three minutes and serve with rice or corn chips
