Fish Laksa

Serves six

 

Ingredients

6 medium snapper fillets or other fish (hand size pieces)
2 large onions coarsely chopped
2 green capsicums diced
3 red capsicums diced
3 tomatoes diced or one can of diced tomatoes
2 tablespoons canola or olive oil
4 cups of water
3 tablespoons laksa paste
1 packet Maggi rice noodles, soaked in warm water to soften

 

Method

Heat oil in electric frypan, add onions, capsicum and lightly colour.

Add laksa paste, tomatoes and water.

Bring to boil and add fish, simmer until fish is cooked - takes approx 5-7 minutes.

Season with salt and pepper to taste.

Serve in a large bowl with the noodles.
