Fish Cakes

Serves eight

Ingredients

2 kilos fish fillets or stringray fillets finely copped or pounded
3 egg whites
2 teaspoons chopped fresh chillies or chilli paste
2 teaspoons chopped garlic
2 tablespoons fish sauce or soy sauce
½ cup olive or canola oil
flour for coating
salt and pepper

Method

Place chopped or pounded fish into large bowl. Add egg whites, fish sauce or soy sauce and set aside.

Fry onions, garlic, and chilli until lightly coloured and when cool, add to fish mixture and thoroughly mix through all ingredients.

Shape into small patties then coat in flour and fry in electric frypan on moderate heat until golden brown.

Serve with nice garden salad and rice.
