Roast Chicken
Serves six
Ingredients
1 large chicken No. 16 or 18 (washed and seasoned with salt and pepper) 6 potatoes peeled and halved 6 carrots peeled and halved 6 pieces of pumpkin peeled and halved 6 onions peeled kept whole 6 pieces broccoli boiled and cooled 2 cups green beans boiled and cooled 2 cups of canola or olive oil salt and pepper
Method
In an electric frypan, place in washed and seasoned chicken and baste with oil. heat until half cooked, this takes approx half an hour.
Add potatoes, carrots, pumpkin and onions, season with salt and pepper and cook for a further 30 minutes.
Add potatoes, carrots, pumpkin and onions, season with salt and pepper and cook for a further hour or until chicken and vegetables are tender.
Add beans and broccoli to chicken and vegetables and cook until heated through.
Note: Other meats can be used, such as wallaby, kangaroo or lamb
