Kangaroo Tail and VegiesServes six
Ingredients2 kangaroo tails chopped into 6 pieces MethodPlace oil in pan and bring to heat add tail pieces and brown, then remove from pan In the same pan - add onions, tomato paste, garlic and fry Add diced vegetables and place back the tail pieces Next add water stock cubes bring to boil, skim off residue Then simmer for at least an hour or until tender Add potatos cook until tender, thicken with a little gravy mix Serve up with rice and extra vegetables like beans or peas Nice with quondong chutney (bush peaches ) Walkabout Chef - Cook for the Family © Steve Sunk |
