Kangaroo Tail and Vegies

Serves six

Ingredients

2 kangaroo tails chopped into 6 pieces
3 large onions diced
3 sticks of celery diced
3 large carrots diced
2 cloves garlic chopped
2 tablespoon of tomato paste
2 table spoons oil canola or olive
4 small beef cubes 6 cups water
2 diced potatos or bush yams
Gravy mix

Method

Place oil in pan and bring to heat add tail pieces and brown, then remove from pan

In the same pan - add onions, tomato paste, garlic and fry

Add diced vegetables and place back the tail pieces

Next add water stock cubes bring to boil, skim off residue

Then simmer for at least an hour or until tender

Add potatos cook until tender, thicken with a little gravy mix

Serve up with rice and extra vegetables like beans or peas

Nice with quondong chutney (bush peaches )
